So much has been going on that I have neglected to post regularly. This is my fourth day on my chemo pill (Ibrance) and so far so good. Luckily I have had no side effects except for anxiety which is completely understandable. With the meds it is necessary to drink at least 64 ounces of water per day and that has been my biggest challenge. At the end of the day I feel like I did when we were kids and would stay in the water all day….waterlogged. I am sure this will pass as my body adapts. Well enough of that.
Tonight I finally decided that I was going to make time to take pictures and post my salad. After searching Pinterest I combined a few recipes and threw together a fresh and simple salad. I intended to add nuts but the only nuts I had were salted and that’s a no-no. Enjoy
- 1 cup chickpeas, rinsed
- 1 vine ripe tomato, diced
- 1/2 cucumber, diced
- 1/2 avocado, sliced
- 1/4 cup Kalamata olives, chopped
- 1/4 cup roasted red peppers, chopped
- 1 teaspoon garlic, minced
- 1 teaspoon olive oil
- 1/4 teaspoon black pepper
Mix it all together and refrigerate for at least 30 minutes.
