With the holidays and college starting I have FINALLY gotten a chance to post something. A few things have changed, one being that I am on my official “getting older” medicine-prescription Nexium. I have been advised to avoid anything spicy (not happy about that), citrus (Eh-can be ok with that) and tomatoes (hmmmm-thats going to be a tough one). I also received the standard advice to not eat after 6 pm, eat small portions and limited fluid intake after dinner (this includes alcoholic beverages (we will see about that one). This is not what I wanted or needed to hear but we all gotta do what we gotta do.
School is going well, we have great teachers and since it is a small campus it is easy to get more one-on-one assistance when we need it. The best news is that I DO LIKE MATH-it is like a giant puzzle. Doesn’t make sense but I get to figure it out.
Last night my husband was craving spaghetti so I made regular spaghetti for him and made the beef and veggies over rice noodles for myself. I did sneak in a few sun-dried tomatoes to test the waters. Seemed to be alright so that’s a good thing. Surprising I think I like what I made for myself better than having the actual spaghetti.
Here is what I did:
- 1/2 pounds ground beef
- 1 cup mushrooms, sliced
- 2 zucchini, sliced
- 1 Tablespoon sun-dried tomatoes (the kind in the jar)
- 2 Tablespoons fresh basil
- 2 cloves garlic, minced
- salt and pepper
- olive oil
- 1 package rice noodles (enough to make 1-2 cups)
Slice and boil the mushrooms, drain and set aside. In a large skillet brown the ground beef, drain and rinse under warm water. Wipe out the same skillet and add a small amount of olive oil. Stir fry the zucchini until slightly tender and then return the beef to the pan along with the rest of the ingredients. Serve over rice noodles. I did not list amount for salt and pepper because I used minimal amounts.
I am still reading all of the blogs and loving all the great recipes but due to homework don not always have the time to make comments (plus our internet is like a snail on peanut butter). I hope to be posting more soon because we do have some small breaks coming up. I may even post some thing that we do in class if they are interesting.
