Kale-Parmesan Crusted Tilapia

Seven more days until Halloween…..Yay.  MY Mother Nature costume is a few steps from being finished.  Our town in small so there are only two places that I know of where people will be dressed up so we will probably go to both.  My husband was going to dress up as well but we only have a portion of his costume and besides, he doesn’t seem that interested anyway so it may be just me.

Today has turned out to be a beautiful day. I had planned on getting the weed eater out, an idea that fell by the wayside.  I did manage to get out for early voting and get that over with so now I have the rest of the day….maybe a little fishing since it is so windy here that my internet signal is suffering-Rrrrrrrr.

For dinner last night I incorporated crushed kale chips with Panko and parmesan for breading on our tilapia, something I have wanted to try for a few weeks.  Not being a big fan of kale I was skeptical but mixed with the citrus seasoning I really enjoyed it.

  • 6-8 tilapia filets
  • 1/2 cup crushed kale chips
  • 1/2 cup plain Panko bread crumbs
  • 1/4-1/3 cup grated parmesan cheese
  • 3 eggs, well beaten
  • citrus seasoning (salt, pepper, garlic, lemon)
  • olive oil

Use a paper towel to pat fish dry.  Sprinkle with citrus seasoning.  Combine crushed kale chips, Panko crumbs and parmesan cheese in shallow dish.  Break eggs in separate shallow dish and beat well.  Dip fish into egg and let excess drip off then dip into dry mixture and press to coat well.  Fry in olive oil until browned and crispy.

  1. My husband has told me kale is forbidden in this house now, lol! My work is having a Halloween costume contest. Since my hand is in this strange cast and traction device, I’m going as a hospital patient with a fake butt poking through the back of the hospital gown, Should be a hoot! I do like Parmesan encrusted white fish, we make that fairly often with Pacific cod.
