I am so excited that the contractors were here yesterday working on our patio. It is going to be so nice when it is finished. While they were working on that I got everything ready for pizza and cut up A LOT of okra. A friend of ours gave us another huge sack full and so two quart-sized bags went into the freezer and I fried some as a topping for our pizza. My husband doesn’t really care for okra so more for me. YAY!! As I was doing the prep it reminded me of the ingredients used in Southern comfort food so that’s how I ended up going in that direction. This pizza along with a few slices of fresh avocado and garlic aioli was incredible.
For The Pizza:
- 2 flatbreads
- 1/2 cup Canadian bacon, chopped
- 1 small tomato, sliced
- 1 avocado, sliced
- 1 cup mozzarella cheese, shredded
- 1/2 cup okra, fried (see below)
- 1/3 cup frozen yellow corn, thawed
- 1/3 cup roasted red peppers (I used the jarred kind)
- 2 Tablespoon fresh basil
- 4-6 cloves garlic
- 1 Tablespoon olive oil
- 1/4 teaspoon sriracha sauce
Mix all ingredients in food processor and pulse until blended. I left our sauce a bit chunky because I like the texture.
For the okra I gave it a coating of 1 Tablespoon of cornmeal, 1 Tablespoon low-fat yogurt, 1/4 teaspoon each of red pepper, garlic powder and salt. Heat olive oil in a skillet and fry until brown and crispy.
Preheat oven to 400 degrees F. Spread the sauce evenly on the bread and top with the rest of the ingredients (except avocado) in any order that you like them. Bake until edges are browning and cheese is melted.
Everybody prefers a different level of crispiness so I did not list a specific baking time. I like my pizza soft and cheesy so I don’t leave it in very long.
