The weather is getting cooler (56 this morning) and I’m not sure if I am ready for it. My little garden seems to be loving it though. The snow peas are getting taller, the Swiss chard and lettuce are ALMOST too pretty to pick and the radishes are doing great. Winter needs to hurry up and be over with so I can plant again.
Yesterday morning I prepared some mayocoba beans with wild rice and this is going to be lunch for a couple of days. These particular beans are one of my favorites and they make a beautifully creamy hummus as well.
Today I am so looking forward to catching up on my blog reading.
Last nights dinner was thrown together quickly so I did not document properly. Basically it was:
- 1 package smoked sausage with peppers, chopped
- 2 cups savoy cabbage, shredded
- 1 can tomatoes and green chilies
- 1 package gnocchi
- olive oil
- Salt and Pepper
Cook the cabbage and sausage in a small amount of water until the cabbage is tender. Remove from pan and add small amount of olive oil and a little water and cook gnocchi until softened (doesn’t take long). Combine the sausage and cabbage with the gnocchi. Done.
