Purple Sweet Potato Salad

Another busy day in the bustling city of Houston.  How did I ever drive in this chaos?  In a little over five months the place is barely recognizable.  There are three new hospitals, apartments and new neighborhoods where there used to be thick forests.  Pretty sad if you ask me.  My best friend and I hit a couple of garage sales and thrift stores today, had lunch at Grotto (margherita pizza and a Moscow Mule) and even though we got drenched in the rain we had an awesome time catching up.  There is also a Whole Foods here so of course I hit that too (lots of goodies there).

img_4186img_4168When I got home everyone was waiting to be fed.  Still having some energy left I made my Daddy some salmon patties, mashed potatoes and some boiled eggs to take to him tomorrow.  Both of the felines were stalking me for a bite (NOT).  While I was at it I organized my sissys refrigerator.  Sometimes OCD gets the best of me but it’s not REALLY a bad thing.

For my dinner I made some pasta (regular and squid ink mixed) with some spicy sautéed shrimp, tomatoes, fresh basil and garlic-chive butter.  As a side I had some purple sweet potato salad that I made last night.  Perfect end to a perfect day.

For the sweet potato salad:

  • 1 purple sweet potato, diced
  • 1 ear of corn, removed from cob
  • 1/4 cup green onion, chopped
  • 1/4 cup honey
  • 2 clove garlic, roasted and mashed
  • 1 teaspoon fresh lemon juice
  • 1 Tablespoon Dijon mustard
  • 1/4 teaspoon cayenne pepper

Preheat oven to 400 degrees and roast sweet potato and whole garlic cloves until tender.  Let cool slightly. Combine the rest of the ingredients in a small bowl and add to potatoes.  I let this salad chill overnight so the flavors would come out.

Have a great evening.  This girl is going to relax, watch some Food Network and try to get in bed at a reasonable hour.  Tomorrow I will be spending the day with my Daddy.
