Bison Chili

img_3831Today we were able to attend a class on healthy lifestyle and nutrition.  It wasn’t anything that I didn’t already know but it never hurts to get a refresher every now and then.  For the most part I eat healthy.  img_3832However, ironically this class came one day after I made an icebox pie that had both cream cheese and condensed milk.  I actually felt guilty while I was making it but once the condensed milk was open the guilty sensation disappeared.  YUM!!  The pie ended up being a little thin because I ate so much of the filling.

Tonight for dinner I made bison chili with just a little salt. I added some extra vegetables and although we will most likely add cheese and oyster crackers it is overall a healthy meal.  The flavors were not overpowering as some chili dishes can be and that made it very enjoyable.

Ingredients:

  • 1 lb. ground bison
  • 1 (14 oz.) can fire roasted tomatoes
  • 1/3 cup chili peppers, chopped (I used Hatch peppers)
  • 1/3 cup frozen corn
  • 2 Tablespoons green bell pepper, chopped
  • 4 shallots, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon red chili powder
  • 1 teaspoon green chili powder
  • 1/2 Kosher salt
  • 1/4 teaspoon black pepper

Brown meat in skillet with shallots, green pepper and garlic.  Stir in rest of ingredients and spices.  Reduce heat to low and simmer for 20 minutes.

  1. Mmmm, mmmm, I do love a good chile when the weather turns (like it has here!). Making soup tonight. My mom used to make a pie with condensed milk, eggs, and lemon juice in a graham cracker crust. That is a guilty pleasure growing up, for sure. I haven’t had one in probably 5 years. xo
