Today we were able to attend a class on healthy lifestyle and nutrition. It wasn’t anything that I didn’t already know but it never hurts to get a refresher every now and then. For the most part I eat healthy. However, ironically this class came one day after I made an icebox pie that had both cream cheese and condensed milk. I actually felt guilty while I was making it but once the condensed milk was open the guilty sensation disappeared. YUM!! The pie ended up being a little thin because I ate so much of the filling.
Tonight for dinner I made bison chili with just a little salt. I added some extra vegetables and although we will most likely add cheese and oyster crackers it is overall a healthy meal. The flavors were not overpowering as some chili dishes can be and that made it very enjoyable.
- 1 lb. ground bison
- 1 (14 oz.) can fire roasted tomatoes
- 1/3 cup chili peppers, chopped (I used Hatch peppers)
- 1/3 cup frozen corn
- 2 Tablespoons green bell pepper, chopped
- 4 shallots, chopped
- 3 cloves garlic, minced
- 1 teaspoon red chili powder
- 1 teaspoon green chili powder
- 1/2 Kosher salt
- 1/4 teaspoon black pepper
Brown meat in skillet with shallots, green pepper and garlic. Stir in rest of ingredients and spices. Reduce heat to low and simmer for 20 minutes.
