Ironically I had already started defrosting salmon and ran across a great recipe from Fabulous Fare Sisters for Salmon With Herb Gremolata which looked amazing. I have made similar coating for fish in the past but never knew the proper terminology so I learned something new today. Because I did not have some of the fresh herbs I altered the recipe for what I did have. Normally I would make some sort of sauce but this needed nothing. Fresh and crispy-loved it.
With the salmon we had Creamy Southern Pea Salad and buttery bow tie pasta.
- 2 salmon filets (skin removed)
- 1 lime
- 1 teaspoon olive oil
- 2 Tablespoons Brazil nuts, finely chopped
- 2 cloves garlic, minced
- 1 Tablespoon basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon Korean red pepper
- 1/4 cup plain bread crumbs
- 1/4 cup plain panko bread crumbs
Preheat the oven to 400 degrees F and spray parchment paper lines baking sheet with cooking spray. Marinate the salmon in lime juice, olive oil, salt and pepper. Combine the bread crumbs, Brazil nuts, basil and spices. Coat the salmon on both sides and bake for 15 minutes.
