Honey-Soy Glazed Cod Over Vegetables And Rice

gr4I know I have been busy but it seems like nothing has gotten done.  I was pre-occupied with a baby bunny situation over the weekend which was insanely stressful and then last night while cleaning my aquarium I find that one of my fish has had a baby-just one I think.  gr3I suppose she was pregnant when I brought her home because I only have two fish and they are both female.  I read somewhere that they can hold onto eggs for a long time-PERFECT.  I can just imagine where this is going.  On a more positive note, the our sage is in full bloom and is BEAUTIFUL-the bees are in heaven.  My snow peas are growing nicely as is the Swiss chard, cilantro and radishes. So far a success.  🙂

sd1I took the easy way out for dinner last night.  I had bought some frozen mixed vegetables a month or so ago with intentions to make chicken pot pie and that plan never came to fruition.  Sooooooo, I made some honey/soy glazed cod on a bed of vegetables and rice with a few Peruvian sweety drop peppers.  I discovered these cute lil’ peppers when they appeared on a brisket taco at a restaurant in Abilene, Texas.  They are sweet with a tiny bit of heat.  The internet is wonderful-I ordered some and they were here in three days.  🙂

  • ar13 cod filets
  • 1/3 cup honey
  • 2 Tablespoons soy sauce
  • 1 Tablespoon sweet chili sauce
  •  1 teaspoon pre-minced ginger
  • 1/4 teaspoon red pepper flakes

Combine honey, soy sauce, chili sauce and ginger in small bowl and pour over cod.  Let sit for a few hours.  When ready, preheat oven to 425 degrees F and bake for 7-9 minutes.  Serve over vegetables and rice.

  • ar2 cup frozen mixed vegetables
  • 2 cup chicken broth
  • 1/4 cup purple onion, finely chopped
  • 1 jalapeno pepper, finely chopped
  • 1 teaspoon garlic, minced
  • 1 whole dried chili pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup sunflower seeds

Combine all ingredients except sunflower seeds and cook on low to medium until vegetables are tender but not mushy.  Drain and reserve broth for rice.


  • 1/2 cup white rice
  • 1 cup chicken broth (use reserved broth from vegetables and add more to make 1 cup)
  • 1 teaspoon butter

Cook rice according to package directions and add butter.  Toss with vegetables and sunflower seeds.
