14 Creative Breakfast Ideas

 I must admit that it was a challenge to develop and keep the habit of eating breakfast but now I can actually say I look forward to it. This became easy once I realized that breakfast could be whatever I wanted it to be.  It seems  Creativity blooms in the morning when the mind is fresh so I have made it my mission to dream up something new every day.  In this post I wanted to share some breakfast ideas, some using leftovers. We hate to waste so I make it my goal to use whatever we have left from our meals.  One advantage that I do have is that I’m not a picky eater so I am just fine having things such as fish for breakfast sometimes.  Hope you find somethin’ that you like.

  • chip1 cup white rice
  • 2 cups chicken broth
  • 2 eggs
  • 1 jalapeno, finely chopped
  • 1/2 cup Colby jack cheese, shredded
  • 1/2 teaspoon salt
  • 3 slices bacon, cut in half
  • 1 Tablespoon brown sugar
  • 1/2 teaspoon chipotle powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon parsley flakes
  • cooking spray

 

Cook the rice, broth, jalapeno and salt until rice is tender.  Stir in the cheese.  Spray two ramekins with cooking spray, break an egg in each and sprinkle with salt, parsley flakes and smoked paprika.  Add about 1 to 1-1/2 inches of water in large pot and bring to boil.  Place ramekins in boiling water. cover and steam until the eggs are cooked the consistency that you prefer.  For the bacon, mix the brown sugar and chipotle powder together and coat the bacon.  Cook until crispy.  Layer the rice, egg, bacon and serve with fresh sliced avocado and cherry tomatoes.

I was working on my computer, read some of your post (11.45 am) and realised I forgot to have my breakfast 🙂 🙂 – But looking at your wonderful suggestions makes me run into my kitchen now……..so forgive me, that I cannot stop.
