RAIN! RAIN! RAIN! Missed my morning walk today-BUMMER. Maybe by this afternoon it will clear up enough to get that in. Instead I baked and did laundry. We just finished watching Zootopia which was a very cute movie-especially the sloths at the DMV.
I mentioned yesterday that my husband suggested beans to go with the leftover Savory Artichoke-Pepper-Bacon-Parmesan Scones that we had for breakfast. Great idea! The beans were great just as they were but I decided to puree mine into a bean soup and topped it with crispy red peppers, sliced avocado and extra freshly ground black pepper.
- 1 cup large lima beans
- 3-4 cups chicken broth
- 1 can (10 oz.) tomatoes and chilies
- 2 slices bacon
- 2 shallots, sliced
- 1 teaspoon garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon freshly ground black pepper
- crispy red peppers
Fill a large pot with water and soak the beans for 3-4 hours or until they absorb a lot of the water. Drain and return the beans to the pan and add the broth, bacon and spices. Cover and bring to a boil, Reduce heat and cook until beans are halfway cooked. Add the shallots and tomatoes and continue to cook, covered until beans are done.
These would be really good with rice as well. Have a great afternoon!
