This is my third day of walking “the hill” on our street and I am fortunate to have Maggie pulling me a little because it is a steep grade. I figure that walking it over and over is much better than walking on a flat road. She was waiting for me this morning but I was a little slow getting ready because I was waiting on laundry to dry. As you can see I was getting ‘the look’. With the 100 degree (or more) weather we have to get out early and get it done. We got back and I got busy digging the cemented-in posts that had held up our deck. This has been a process because they are in there really deep but looking on the positive side-it is exercise. Three more to go and then we can think about pouring the concrete. Cannot wait until it is DONE!!!!
The heat came on very fast so I came inside made guacamole for my dinner. I thought that by adding the radishes it would add some crunch and of course extra vegetables. I love radishes and so I was excited about how much I enjoyed this. I lightly fried some corn tortillas in a small skillet with cooking spray, loaded them with guacamole and topped them with queso fresco cheese. Very refreshing for a light and healthy, summer meal.
Heres how I made them:
- 3 ripe avocados
- 4 radishes, finely chopped
- 5 cloves garlic, minced
- 1 jalapeno, finely chopped
- 1/4 purple onion, finely chopped
- 1 Tablespoon fresh cilantro, finely chopped
- 1 teaspoon lime juice
- 1/2 teaspoon red pepper flakes
- Salt and Pepper
- cooking spray
- corn tortillas
- queso fresco cheese
Scoop out the avocados into a bowl and stir in spices and lime juice. Mash with a fork but leave it slightly chunky. Chop the other vegetables and stir into avocado. Chill until ready to serve. Spoon avocado into corn tortilla and top with crumbled queso fresco cheese.
