Loco Moco (with Bison)

Well, our little lake is slowly going down again….WE NEED RAIN (and we need Abilene, Texas to stop using water from here).  Hopefully this weekend we can get out on the kayaks and enjoy this hot summer weather.  Also, I am super excited that we are having lunch with my Aunt and Uncle on Monday as they head back to sunny California. We totally intended on making the trip to Houston to visit with everyone while they were here, that is until Ford Motor Company sent me a recall notice on my truck saying that the brake system may have a problem but that the parts won’t be available until later this year.  Soooo….wondering ….scratching head….what am I supposed to do until then.  Not drive it?  Drive slow? So far I have not had the problem they are speaking of so I guess I will just wait.

locomoco9I was laughing to myself when I came across a recipe for Loco Moco.  Loco meaning ‘crazy’ and Moco meaning ‘booger’.  Now why in the world would someone name food after a booger.  It sounded like an interesting combination of ingredients so I gave it a try.  I used bison (‘bisonte’ if I were to stick with Spanish terms) instead of ground beef and added a little butter to the patties for fat since this meat is very lean.  The recipe also lacked the heat that we prefer so a little more chili paste and problem solved.

For the Patties:

  • 1 pound ground bison (or ground beef)
  • 2 Tablespoons butter, cut into small cubes
  • 1 Tablespoon soy sauce (I used low sodium)
  • 1 Tablespoon fish sauce
  • 1 Tablespoon brown sugar
  • 1 Tablespoon chili paste
  • 1 clove garlic, minced
  • 1/2 teaspoon ginger, minced

Mix all ingredients with hands until well blended and shape into four patties.  Cover and cook in stovetop grill pan (oven or skillet will work as well) until done.  I always add a little bit of water to my pan.  The steam from the water will keep the patties moist.

For the Mushroom Gravy:

  • 5 medium bella mushrooms, sliced thin
  • 1 cup beef stock
  • 2 Tablespoons butter
  • 2 Tablespoons all-purpose flour
  • 1 Tablespoon olive oil
  • 1 Tablespoon soy sauce
  • 1 Tablespoon fish sauce
  • 1 Tablespoon brown sugar
  • 1 teaspoon chili paste
  • 1 medium clove garlic, minced
  • Salt and Pepper (optional)

In large skillet, brown the mushrooms and garlic in olive oil.  Remove to separate plate.  In the same skillet on medium heat add the butter and flour and stir constantly until slightly brown.  Pour in the beef stock and spices and stir ( I use a flat bottom whisk) until smooth.  Add the mushrooms back to the skillet and stir well.  Remove from heat into serving bowl.

Cook 1 cup of white rice according to package directions.  A little more butter added to the rice is a bonus step that I always take because we LOVE buttery rice.

When serving, start with a scoop of rice on the plate, pour some mushroom gravy over the rice, top that with a patty and then top the patty with a fried egg.  YUM!  My husband opted for no egg and put ketchup all over my beautiful canvas of food.  Sigh!

  1. Oh dear, what to do with hubbies that destroy a perfectly presentable and edible meal, lol! I’m not sure I’d worry too much about the recall but it sounds like it is too late to change your mind. I do hope you get some rain soon!
