Steak & Mushroom Shepherds Pie

pie4I came across an article on AOL that listed the most popular and most ordered foods at restaurants.  We rarely eat out so I was curious to find out what this ‘list’ was all about.  After scrolling through I now know that there is a reason I prefer to eat at home.   However, I did like the idea of the ‘bowl system’ which brought to mind Shepherds Pie.  I love it but haven’t made it in a very long time.  Really….just the idea of something with a heap of creamy mashed potatoes on top was making me hungry even though I had just had two slices of leftover pizza.  So, I did what I always do and use what we have in the freezer and fridge and came up with this–Steak, Sauteed Mushrooms, Red Peppers and Onions with a thick, creamy top layer of mashed potatoes, chives and cheese.  I really should go with this ‘bowl system” more often-any excuse to make mashed potatoes, right?

 

  • pie2 New York strip steaks (fat removed and sliced thin)
  • 1/4 cup soy sauce
  • 1 Tablespoon olive oil
  • 1 Tablespoon red wine vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon chili paste
  • Salt and Pepper

Slice steak and add marinade ingredients.  Let marinate unrefrigerated for about 30 minutes.

  • 1 red bell pepper, sliced thin
  • 1/2 purple onion, sliced thin
  • 4 bella mushrooms, sliced thin
  • 1 teaspoon garlic, minced
  • 2 Tablespoon olive oil

 

Saute pepper and onion in 1 Tablespoon olive oil until tender.  Remove from pan and add remaining 1 Tablespoon of olive oil and saute mushrooms until slightly tender.  Remove from pan and drain.  Add mushrooms to pepper and onion.

Now, back to the meat.  In the same skillet add the meat in small batches and sear on both sides. This does not take very long.   Remove, drain on paper towel and add to vegetable mixture. Cover and let it rest.

  • 4 medium russet potatoes, peeled and cubed
  • 1/3 cup green onion
  • butter
  • half and half or milk
  • 1 teaspoon garlic, minced
  • Salt and Pepper
  • Shredded cheese

Boil the potatoes in salted water until tender.  Add butter, salt, pepper, garlic and mix with hand mixer until creamed.  Add milk and green onions and mix again until smooth.  Spread the potatoes evenly over the beef and vegetables.  Top with shredded cheese.  We added a few crispy fried red peppers as well for something crunchy.

      1. Yes it was Gina, thanks! The weather was gorgeous in the upper 60s and lower 70s, sunny. The only thing bad that happened was Klutz here rolled her ankle mis-stepping out of the RV. But I can still walk, it’s just a tad sore. 🙂
