Roasted Vegetable Pizza With Red Pepper Marinara & Basil Cream Sauce

pizza2The last few days have been crazy tearing our deck apart but once we see the end result it will be amazing-‘Just Do It’-I keep telling myself.  Over the weekend my cooking seemed to take a back seat to all of this being that I was too tired to do it. Today is a new day and I woke up refreshed, grilled some veggies and picked some fresh basil and got started on our dinner.  We are having pizza- YAY-grilled vegetables, homemade roasted red pepper marinara with a sour cream-basil sauce.  Doesn’t get much better than that.

  • 2 pieces Naan bread (I used garlic flavor)
  • 3 oz. dry coppa (black peppered beef)
  • 1 Roma tomato, sliced thin
  • 1 red bell pepper,halved
  • 2 baby bella mushrooms, sliced thin
  • 6 radishes, sliced thin
  • 3 shallots, sliced thin
  • olive oil

marinara1Preheat oven to 400 degrees F.  Toss veggies (separately) in olive oil and spread evenly on baking sheet.  The cooking times for these may vary so I cooked the radishes, onion and pepper together and the mushrooms and tomatoes together.  Coppa is something that I picked up on a whim and absolutely LOVE.  I had planned on using Canadian bacon but this seemed like a better choice.

 

To make the roasted red pepper marinara sauce:

  • marinara1 roasted red pepper, peeled
  • 2 Tablespoons fresh basil
  • 1 Tablespoon parmesan, grated
  • 1 teaspoon garlic, minced
  • 1 teaspoon olives, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon oregano

Blend all ingredients in a food processor until smooth.  This sauce is so fresh and colorful.  The initial thought was to put the roasted red pepper on the pizza but the thought of a marinara sounded so much better.

Basil Cream Sauce:

  • basil cream sauce1/3 cup sour cream
  • 1/3 cup parmesan, grates
  • 1 Tablespoon fresh basil
  • 1 teaspoon garlic, minced
  • 1 teaspoon lime juice
  • 1/2 teaspoon kosher salt

Mix all ingredients in food processor until smooth. DIP YOUR SLICE!

Normally I would just slap an embarrassing amount of sour cream on my plate for dipping but I wanted to make something different.  This was perfect.  The parmesan did not break up all the way but I wanted to use fresh cheese and that was probably to be expected.  Either way it was delicious.
