A few days ago my sister sent me an invitation to try Blue Apron free for one week. In case you haven’t heard of this company, they pre-package fresh ingredients and deliver it straight to your door with the recipes. I signed up of course to see what it was all about and received my package yesterday evening. They sent me the ingredients for three meals and I totally intended on following the recipes (I really did) but as usual I strayed and made one dish that will last us a couple of days. The food they sent was very fresh and was packaged beautifully with cute little bottles and pouches of seasonings and well outlined recipes. This morning I took a total detour and made chicken and shrimp vegetable stew. My husband is a big eater and the pre-planned meals were just not going to be enough. I reserved the ground beef (which looks amazing) for burgers this coming weekend. This is a great service if you find yourself short on time to shop and prepare healthy meals. I also made some Red Lobster Cheese biscuits (from a box) to go with this stew.
We just finished eating-it was awesome. I have not had shrimp that tasted this fresh in quite a while. Dinner was perfect. It’s only 7:30 pm and I am ready to crawl in bed. The temperature outside has been hovering around 100 degrees and I have been out in it tearing out our wood deck so we can extend the concrete back porch and add a spa. I figured no better time than now to get started on that.
Now-enough blabbing-on to the stew…..

From what they sent I used:
- 1/2 pound shrimp, peeled and deveined
- 2 boneless chicken breasts, cut into cubes
- 1 zucchini, cubed
- 1 yellow squash, cubed
- 1 ear yellow sweet corn, cut from the cob
- 1 Serrano pepper, diced
- 1 potato, cubed
- 20 fresh green beans, cut into 1 inch pieces
- 2 cloves garlic, minced
- 1 plum tomato, diced
- 1/4 cup parmesan cheese, grated
- 2 Tablespoons cilantro, chopped
- 2 Tablespoons butter
- 1/2 teaspoon dried red chili flakes
- 2 Tablespoon all-purpose flour
The ingredients I added were:
- 3 cups chicken broth
- 1/3 cup white onion, diced
- 1/3 cup half and half ( milk would work too)
- 1 jalapeno, diced
- 1/2 teaspoon chili paste
- 1/2 teaspoon coriander
- 1/2 teaspoon Cajun Seasoning (salt free)
- 2 Tablespoon olive oil
- Salt and Pepper
To start, I cooked the potatoes and green beans in the broth until they were tender. In a separate large skillet I sautéed the rest of the vegetables with 1 Tablespoon of olive oil until tender and then combined all of them together. In a small skillet added the remaining 1 Tablespoon of olive oil and cooked the chicken until almost cooked through then I added it to the vegetables in the large skillet In the same pan I cooked the shrimp until almost done and added them to the large skillet with the rest of the ingredients. On low heat I continued cooking the stew until everything was done. In a small bowl I mixed the flour, parmesan cheese and half and half until smooth and added this to the stew to thicken it.
Although the recipes sounded wonderful I just couldn’t help myself so this was the result. I am going to keep receiving the packages for a few weeks to see what else they have to offer.
