Getting a head start on dinner today. I know these potatoes are very simple but they are very yummy. As everyone knows, cilantro is sold in a giant bouquet and so it has somehow been incorporated into everything cooked in my kitchen lately. Normally I would freeze it for later but it just screams summertime to me. Truthfully I am worried that when I sweat I may just reek of it (is that a bad thing?)
- 1/2 pound new potatoes, peeled
- 1/4 cup butter
- 1/3 cup mascarpone cheese
- 2 Tablespoons fresh cilantro, chopped
- 2 cloves garlic, minced
- Salt and Pepper
Peel and cook potatoes. In small bowl mix remaining ingredients and microwave for 30 seconds. Stir well and pour over potatoes.
