Good morning….Happy Monday.
I suppose for some people the words ‘Happy’ and ‘Monday’ should not be used together but for me Monday is the day when everything starts coming back together. Everything always seems to get neglected on weekends. I did make some brownies (from a box) on Saturday. If I remember correctly I bought them at Christmas as a back-up plan because I was making a few things for a bake sale. Thank goodness I didn’t have to resort to it. Also, as I mentioned yesterday, I made a corned beef roast-one of my favorites that I don’t make often (reeaally fattening).
One thing I want to share is a pic my Daddy sent me yesterday of his hayfield. The flowers are so beautiful. Would make an awesome painting.
First thing this morning (bright-eyes and bushy-tailed) I put together a corned beef hash with radishes instead of potatoes, a little cilantro and a quince jam glaze. Perfecto! I suppose I could have plopped a fried egg on top too but it was quite enough already.
- 1 cup corned beef roast, chopped
- 1 cup radishes, diced
- ½ white onion, diced
- 1 teaspoon cilantro
- 1 Tablespoon quince jam
- 1 Tablespoon olive oil
Heat the oil in a small skillet and saute the radish and onion until tender. Add in the chopped corned beef and cilantro and heat through. Stir in the quince jam and stir until meat and vegetables are well coated. Serve with toasted bread.
