Grapefruit-Mandarin Salad

Great salad if you love grapefruit….

I have not eaten a grapefruit in probably over 15 years but for some peculiar reason They looked so fresh and so I thought I’d give it another try.  Last time I had one was with my Nanny and she some weird little jagged grapefruit spoon  and we sprinkled them with a LOT of sugar.  Today, however, I didn’t want to add sugar so starting with a bed of arugula I added mandarin oranges (basically in case I hated the grapefruit), walnuts, a small amount of honey and a little lime juice.  Found out quickly that no matter how pretty it was in the store and on the salad-I still do not like grapefruit.  I went ahead and ate the salad but when it come to buying one again all signs point to NO unless it is in a dressing or sauce recipe and then I would have to really think about it.

Moving on….I have a corned beef roast in the oven and it smells wonderful.  No plan yet on what I am making from it so check back later.  Enjoy the afternoon!

  • 1/2 cup mandarin oranges
  • 1/2 cup arugula
  • 1/4 cup walnuts
  • 1 Tablespoon honey
  • 1 teaspoon lime juice
