Salmon Soft Tacos

Morning is my favorite time of day-I wake up with to-do lists dancing in my head ready to tackle the day. It’s going to be hot but hopefully not 20 mph winds like yesterday.

salmon4Last night I made salmon tacos.  It seemed like a nice summery meal, very light which was good because we hung out on the back porch later than we should have.  Luckily, the vegetable salad and was already made so all I had to do was pan sear the salmon.  It was a beautiful sunset, the dogs were playing and having fun and of course the bunnies were in the backyard.  THERE ARE SO MANY….but they can’t get in my garden anymore since I built the fence.  HA!

What you will need:

  • 2 salmon filets (we like the center cut)
  • cayenne pepper
  • garlic powder
  • black pepper
  • salt
  • olive oil
  • cooking spray

salmon1Sprinkle salmon with spices and cook in olive oil on Med-Hi heat until browned on both sides. (This does not take very long).

Using a paper towel, wipe the oil from the pan and spray with cooking spray.  Heat the corn tortillas until the edges are bare starting to get crisp.

Chop some fresh cilantro and baby arugula and place on tortilla.   Top with some veggie salsa, salmon and a drizzle of crema.

 Veggie Salsa:

  • 1/2 cup cucumber, peeled, seeded and diced
  • 1/3 radish, finely chopped
  • 1/3 sweet baby bell pepper, finely chopped
  • 1/3 purple onion, finely chopped
  • 1 jalapeno, finely chopped
  • 1/2 cup frozen edamame
  • 1/4 cup fresh cilantro, chopped
  • 1 Tablespoon garlic, minced (I used the garlic in oil)
  • 1 Tablespoon olive oil
  • 1 Tablespoon lime juice

Toss all the ingredients together and refrigerate.
