This morning was really beautiful so we did a little (and I mean a LITTLE) yard work. Our purple martin babies are out and flying around their bird house which in desperate need of repair or replacement. They don’t seem to care that they live in a shack but we are planning on getting a new one before next season. They will be so excited (hopefully) when they return next year-either that or they will wonder who has been messing with their stuff.
After the other mornings ‘breakfast fail’ I was still craving eggs and black beans and since we had leftover sausage it was the perfect time to try again. This time it was successful. The previous attempt I was going for a frittata but keeping these ingredients separate this time had a much better result. It’s going to be a beautiful day. 🙂
- 2 eggs
- 1/3 cup smoked sausage, cubed small
- 1/3 cup black beans (I used canned beans-drained and rinsed)
- 1 mini sweet red pepper, diced
- 1 small tomato, diced
- 1 Tablespoon heavy whipping cream (or milk)
- ½ teaspoon dill
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon salt
- Cooking spray
In small bowl whisk the eggs, heavy cream and spices until well blended. Spray skillet with cooking spray and cook eggs on medium heat, stirring gentle until fluffy and almost done. Move the eggs to one side and add the remainder of the ingredients to the empty side of the pan. Toss until heated through. Remove from heat.
