Zucchini-Walnut Mega Muffins

As I mentioned in an earlier post, a veteran friend of my husbands gave us some zucchini and requested that I make some bread so that is what I did yesterday afternoon.  The turned out beautifully-very moist and fluffy.  I packaged them individually in cellophane bags and secured them with a piece of narrow rope.  I figured that he may want to share with a couple of friends. We were able to deliver them to the VFW while they were still warm and as I expected, he did share with his buddies. 

zucchini muffins5Since I had never made zucchini bread before I searched Pinterest (of course) and found a recipe at A Family Feast  for The Best Zucchini Bread Ever.  Because I just can’t help it, I strayed from the original recipe and made the muffins instead of a loaf and substituted walnuts for the pecans.  These are truly wonderful muffins.

  •  3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 4 teaspoons ground cinnamon
  • 3 1/2 cups zucchini, grated (I spiraled it with the mandolin and then chopped)
  • 3 eggs
  • 1/2 cup apple sauce
  • 1/2 cup vegetable oil
  • 2 1/4 cups granulated sugar
  • 4 teaspoons vanilla extract
  • 1 cup chopped walnuts
zucchini muffins4Preheat oven to 350 degrees F.  Spray large size muffin pan with floured baking spray.  In large bowl, sift together flour, baking soda, baking powder, cinnamon and salt.  Grate the zucchini, place in dish lined with a paper towel and with another paper towel press to remove as much water as possible from the zucchini.  In a separate large mixing bowl blend the sugar, eggs, applesauce, oil and vanilla.  Gradually add the dry ingredients until well blended.  Using a rubber spoon fold in the zucchini and walnuts.  Gently mix well.  Pour the batter into muffin pan and bake for 30 minutes or until inserted toothpick come out clean.   Let cool slightly before removing from pan.
