Spicy Roasted Potato Salad

Hope everyone enjoyed this long holiday weekend.  We spent the majority of the day sitting on the pier fishing.  Lots of nibbling but not one fish.  There was a nice breeze so it really didn’t matter.

IMG_1945Took a tiny break from fishing and prepared the potato salad so it would have time to chill.  The flavors come through so much better that way.  I didn’t use a recipe but my goal was to try and get more natural flavor and avoid using so many icky condiments.  Taste test says that I was successful in doing that.   The steaks and roasted corn are cooking as I am typing.  We are starving—it needs to hurry up.  I suppose I should have started cooking earlier.

  • 2 large russet potatoes, roasted, peeled and cubed
  • 1/2 purple onion, thinly sliced
  • 1 jalapeño, diced
  • 4 cloves garlic, toasted
  • 4 pickle slices, patted dry and diced
  • 4 slices bacon, cooked crisp and crumbled
  • 1/4 cup mayonnaise (I used canola oil mayo)
  • 1/4 cup spicy mustard (I used Creole mustard)
  • 1 Tablespoon butter
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • Olive oil
  • Cooking spray

Preheat oven to 400 degrees F. Spray baking pan with cooking spray and spread diced potatoes evenly on sheet.  Sprinkle with a little salt, pepper and garlic powder.  Cut tip if garlic pod, coat with olive oil and place in baking sheet. Roast for 25 minutes or until potatoes are tender. Pop garlic from pod and mash with a fork. Add butter to small skillet and sauté  onion and jalapeño until  tender and slightly browned. In large mixing bowl combine all ingredients and mix well. Cook bacon until  crisp. Refrigerate. Top with crispy yummy bacon when ready to served.  I made a cute little star shaped potato for the top as well—-just because. 🙂
