Spicy Italian Sausage Pasta Pie

IMG_1835I was apparently babbling on yesterday, something about trying to not eat so much cheese—blah, blah, blah.  Who am I kidding-life is to short not to eat cheese.  It is next to impossible for me to have a meal without it soooooo ….for our dinner tonight I made an Italian sausage pasta pie with three (3) varieties of you got it….cheese.  Again, I am always experimenting so there was no official recipe to follow but I do write everything down as I go so nothing is overlooked when I post.  It is almost like lasagna.  It actually did slice like a pie its just that my piece was too big (ugh) to capture it in a pic.🐷

For the sauce:

  • 1 pound ground Italian sausage (medium heat)
  • 1 can (10 oz.) tomatoes and green chiles, diced
  • 1 can (4 oz.) tomato paste ( I used basil, garlic & oregano flavor)
  • 1/2 white onion, diced
  • 1/2 bell pepper, diced
  • 1 jalapeno, diced
  • 4 cloves garlic, minced

Brown the sausage with the onions, peppers and garlic.  Add the tomatoes and tomato paste and heat through.  Set aside.

  • 1-1/2 cups large elbow macaroni
  • 1/3 cup cottage cheese (I used large curd)
  • 1/3 cup parmesan cheese, shredded
  • 1/3 cup mozzarella cheese, shredded
  • 1 egg
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Preheat oven to 350 degrees F.  Cook the pasta according to package directions.  Add the butter and stir.  Combine the cheeses and egg and toss gently into the pasta.  Spray a 9 inch backing disk with cooking spray.  Pour pasta mixture into dish and spread evenly.  Top pasta with meat mixture.  Cover with foil and bake for 30-40 minutes.  Sprinkle with mozzarella cheese.
