Today is my Daddys 78th birthday. When I spoke with him this morning he was planning to bale hay. He has a friend helping him and he does like to be on a tractor (of any kind) so he will have fun. At least they are getting started early before the afternoon heat wave hits.
My husband and I spent the first part of the morning fishing-1 little baby fish. I am sure thankful we are not depending on our fishing skills to land us a meal because we would starve to death-just sayin’.
Speaking of meals I made breakfast (brunch) a little later than normal and wanted to prepare something that wasn’t so “breakfasty”. The route I chose was to make a “French toast style” sandwich stuffed with Italian ingredients-similar to a Panini but without the pretty grill marks. The flavors complimented each other perfectly and the egg on the outer bread just made it better. Will for sure make this again.
- 3 sliced salami
- 1 egg
- 1 teaspoon milk
- 2 slices French bread
- 2 Tablespoons purple onion, thinly sliced
- 1 baby bella mushroom, thinly sliced
- 1/3 cup mozzarella cheese, shredded
- 1 teaspoon olive salad (or chopped olives)
- dried basil
- parmesan cheese
- salt and pepper
- Cooking spray
Butter one side of the bread and brown in skillet. Remove and place ingredients on toasted side of bread. Whisk the egg, milk, basil, parmesan cheese, salt and pepper. Spray the pan with cooking spray and dip sandwich into egg mixture. Place in pan and cook until browned on both sides and cheese is melted. Mine took a little longer because I used thick sliced bread. I like crunchy onions but caramelizing them would be great too.
*I put the ingredients on in this order because I wanted two layers of onion, olives and cheese: 1/2 of the cheese, 1/2 of the olive salad, mushroom, salami, remainder of olive salad, remainder of onion then remainder of cheese.
