Wind, wind and more wind….no kayaking today. The fish were biting earlier but only to steal bait. I was somewhat productive this morning-made a breakfast frittata and roasted some peppers to freeze for later. All in all it has been a lazy day. Nothing wrong with that.
- 3 eggs
- 2 Tablespoons milk
- 1 1/2 cups frozen O’Brien style hash brown potatoes
- 1/2 cup garlic cheddar
- 1 jalapeno, diced
- 3 slices bacon, cooked and chopped
- salt and pepper
Preheat oven to 350 degrees F. Heat oil in iron skillet and cook potatoes until slightly brown. Add jalapeno. Mix eggs with milk and pour over potatoes. Top with bacon and cheese. Bake until bubbly and eggs are set in the middle.
