Salmon-Orzo-Pico Stack

 

‘I can do it’ is what I had to keep telling myself when I realized that the part we had just replaced on our mower needed to be replaced AGAIN. It was a pain in the rear the first time but being that I paid attention it was relatively easy the second time. My husband works very hard at his job and I did not want him to have to worry about mower problems on his weekend…So….I fixed it (I think). We will see next time I mow. Nice hot, sweaty day….love it.

Made myself a treat for dinner tonight. I am a huge lover of the crab stack on the menu at Saltgrass Steak House and thought I would recreate it with salmon. My husband had a company meeting tonight so I made a lovely stacked salmon avocado salad just for me.

Bottom-Layer 1

  • 1/2 cup Napa cabbage
  • 1 Tablespoon crèma
  • 1/2 teaspoon lime juice
  • salt and pepper

Layer-2

Orzo Pasta cooked in chicken broth with butter, salt and pepper

Layer-3

Avocado, tomato, jalapeno, cilantro and lime juice

Layer-4

Salmon sprinkled with lemon pepper, garlic powder and salt.  Pan fried in coconut oil.

I used a piece of 4″ straight pvc pipe sprayed with cooking spray.  Press layers into pipe and refrigerate for 30 minutes.  After lifting pipe I garnished with fresh basil, sriracha, an avaocado slice and of course….MORE CREMA.

This was a very light dinner.  Perfect!
