Finally….we have our first perfect little tomato. Out of the three plants we started with only one survived the bunnies so I just planted two more. Today is yard work day. I decided that designing a zone chart of our yard would make it more manageable. I divided it into 10 zones and that way I can concentrate on one zone at a time instead of feeling overwhelmed by tackling it all at once. Problem solved. After breakfast and coffee I need to get started.
Cake for breakfast….well sort of. We had some leftover pound cake so I sliced that and made cinnamon French toast with blueberry syrup.
For lunch I am made split pea soup (no carrots) with bacon and roasted red peppers. The first time I had pea soup was at a hotel in Indianapolis and it was part of a set menu for the group I was with. I never would have intentionally ordered it-always looked disgusting but after that I was hooked.
- 2 cups dried split peas
- 5 cups chicken broth
- 1/2 cup white onion, diced
- 1/2 cup roasted red peppers, diced
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon thyme
- 1/2 teaspoon Cajun seasoning
- 1/2 teaspoon pepper
- 1 slice bacon
Cook peas in broth with bacon, onion and spices until peas are tender. Cool. Place in blender and puree. Add the red peppers on top.
