Sriracha Egg Over Masa Cake

 I have a plan….today is the day that I take control back from the bunnies.  It is time to start re-working my garden and starting a compost bin.  Thanks anotherfoodieblogger for all the great information on this subject.

Tried something new for breakfast this morning and LOVED IT.  I made some masa cakes, topped it with a fried egg, sriracha sauce and added a side of sliced avocado.  The fried egg was sprinkled with cilantro, salt and pepper.  I could literally eat this breakfast every single day.

IMG_1484Masa Cake:

  • 1/2 cup harina masa
  • 1/4 cup all purpose flour
  • 1/2 teaspoon baking powder
  • salt
  • buttermilk
  • olive oil

Mix all ingredients together adding buttermilk until consistency of pancake batter and fry in hot oil until browned and cooked through.
