Cod & Sauteed Radish Tacos With Chipotle Ranch

Spring has faded and hot Texas weather has arrived….love it!  My little garden is still hanging tough but I plan on re-planting soon-maybe some beans, peas and eggplant.  Really it is all still experimental at this point.  The keyhole garden concept has worked really well so far so I will definitely continue with that.  A composting area is something that has been on my mind too and I would love any advice or suggestions in regards to that.  My grandaddy always had a garden and he was good at it-he had secrets.  I sure wish I had paid closer attention.

For dinner tonight I made panko crusted cod tacos with radishes sautéed in white wine and chipotle ranch dressing-sliced avocado on the side. We are also having the cream cheese, pea and carrot stuffed eggs that I posted this morning.  The two dishes do not exactly go together but it makes a happy tummy and that’s all that matters.

IMG_1479For the fish:

  • 3 cod filets
  • panko bread crumbs ( I used garlic flavor)
  • 2 Tablespoons chipotle ranch dressing (see below) reserve rest for tacos
  • salt and pepper
  • cooking spray

Preheat oven to 400 degrees F.  Combine the crumb ingredients and mix well.  Season the fish filets with salt and pepper.  Spread chipotle ranch dressing on each filet and press firmly into crumb mixture.  Spray  oven proof skillet with cooking spray and cook fish for 1-2 minutes.  Remove from heat and put on top rack in oven for 5-10 minutes until browned.  My filets were very thick so cooking time may be less for thinner filets.

  • 6 radishes, chopped
  • 1 Tablespoon toasted sesame oil
  • 1 Tablespoon white cooking wine
  • 1/2 teaspoon cilantro
  • 1/2 teaspoon garlic powder
  • salt and pepper

Chop radishes, mix with oil and spices.  Saute over medium heat 8-10 minutes adding the white wine halfway through.  Cook until radishes are tender but not mushy.

IMG_1473For the chipotle ranch sauce:

  • 1/2 cup Fage plain yogurt
  • 1 Tablespoon mayonnaise
  • 1 teaspoon lime juice
  • 1/2 teaspoon chipotle powder
  • 1/2 teaspoon cilantro
  • 1/2 teaspoon garlic powder
  • salt and pepper

Mix all ingredients together and refrigerate.

  1. Wow great recipe! I have a bunch of radishes about to come up in my garden, I like the radish recipe for sure. So, how we compost for our garden: Get one of those big covered Rubbermaid (or generic) tubs. Add one or two bags of good organic garden soil, then as you have veggie kitchen scraps, egg shells, coffee grounds, etc. add them as you collect them. I keep a large covered coffee can under the kitchen sink for that. Empty as needed into the compost bin and stir with a shovel. Switch out to a new coffee can when you get too grossed out, lol. Periodically add a little water to the compost and stir some more if it gets too dried out. Make sure it’s in the sun, too, for part of the day. The next growing season, mix the compost into your garden soil and enjoy!

    1. Wow. Thanks. Great idea. I have a few nice heavy tubs already. I am excited. I already have extra scraps in the freezer because my keyhole garden is small and doesn’t require much. Thank you again so much. Really really appreciate the great info-getting started today. 😊😊😊😊
