So….I painted a little this morning while it was still cool outside. I opened the windows on my art room to get a little breeze going and turned on some zen music-always gets me in the mood to put brush to canvas. The task today was to continue with some painting that I had started a few months ago. Sometimes it helps to walk away and come back at a later time. I absolutely love painting in grayscale or any monochromatic style AND ANYTHING funky. The guitar did not need much more work but the boot seemed as if I would never finished….but today I did. The weather says there is a possibility of rain tomorrow so maybe I can start a new painting.
We did a few minutes of fishing this evening and both caught fish. How exciting.-we are one step closer to catching THE BIG ONE.
For dinner tonight I went on a whim and made bacon wrapped pork chops. This is the first time I have tried cooking chops this way and it turned out great. They are pretty too.
- 6 boneless, thin cut pork chops
- 1/2 small white onion, sliced
- 2 jalapeno, sliced
- 2 pieces string cheese, cut lengthwise and in half
- 3 slices bacon, cut in half
- garlic pepper
Preheat oven to 350 degrees F. Pound the pork chops with a meat tenderizer. Sprinkle with garlic pepper. Place 2-3 onion slices, 2 jalapeno slices and 1 piece of string cheese on pork chop and roll. Wrap bacon around roll-up and secure with a toothpick. Bake at 350 for 30 minutes then turn up to broil for 3-5 minutes to crisp bacon.
- 1/2 cup Fage plain yogurt
- 1/4 cup light mayonnaise
- 3 Tablespoons lime juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cilantro
- 1/2 teaspoon celery seed
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Mix all ingredients together and refrigerate until ready to dip into it.
