Hot dogs again–this time with Opa’s Hatch Green Chili Smoked Sausage. These peppers are awesome! They hail from Hatch ,New Mexico (Chile Capital of the World) and are JUST RIGHT-mild and not too spicy. Time to stock up on these peppers and pepper products because one month out of the year just ain’t enough.
It was fate that I stumbled on these little goodies. I was actually looking for Italian sausage and my eye just happened to see them. It was my lucky day.
Yesterday was so relaxing-I did next to nothing just like I said I was going to do. As the day progressed I did do the few dirty dishes, swept the floor and made dinner. I also ordered two kayaks (Austin Kayak) so we could get out on the lake this summer, cruise around and do some fishing (great exercise too). We’re really excited that they will arrive in time for the weekend.
Last night I baked the sausage wrapped in foil with a small amount of water. For a condiment I made avocado cream cheese and topped them with Monterey jack cheese and thinly sliced purple onion. Just ONE dog for me (that’s a first).
Avocado Cream Cheese
- 4 oz. softened cream cheese
- 1 avocado
- 1 teaspoon cilantro (I used dried)
- 1/2 teaspoon garlic powder
- 1 teaspoon lime juice
- salt and pepper
Mix all ingredients together and refrigerate
