Italian Omelette With Pasta

Today seems like a good day to start sorting through my art studio and narrowing down the hodgepodge of materials that I have accumulated.  As an artist it is sometimes hard to toss things that could possibly be the one item that flips the switch on the “creative lightbulb”. I started the day off right with a healthy breakfast and a cup of hot blueberry hibiscus tea.  At first I heard a little voice say “just have peach cobbler for breakfast, it would be easier”—nice try.  Glad I decided to cook something because it was awesome.

Try this variation of an omelette on a bed of buttery fettuccine.  The roasted red pepper, olive salad and mozzarella combination packed a serious punch of flavor.  Loved it.

  • 1 egg
  • 1 Tablespoon milk ( I used half & half)
  • salt and pepper
  • 1 Tablespoon roasted red pepper
  • 1 teaspoon olive salad
  • 2 Tablespoons mozzarella cheese

Mix the egg, milk, salt and pper with a fork.  Pour into small heated skillet.  I use an electric brunch pan that works perfectly.  Cook until bubbles appear and add rest of ingredients.  Fold one side over and then the other.  Should be nice and brown.
