Hot Water Cornbread

20160529_131645516_iOSWoke up craving cornbread….weird.  I DO-I DO know how to make homemade cornbread however I did not have buttermilk nor did I have Morrisons Texas Style mix as a backup sooooooo….I made hot water cornbread.  My Nanny used to make it quite a bit when we were kids.  Her recipe was just a basic fried corn patty so with that concept I added jalapeno, onion and pepper jack cheese.  I overdid it on the salt just a tad (oops) but that didn’t stop me, I have eaten two of them already.  It is a possibility that I can crumble them later and make a Mexican casserole (that would be awesome).

Storms passed through last night and reflections of  lightening over the lake was phenomenal.  My husband slept through it but I can’t help but stay awake and watch. Hope everyone has a great Sunday.

  • 1 cup cornmeal
  • 1 Tablespoon all purpose flour
  • 1/3 cup diced jalapeno
  • 1/3 cup pepper jack cheese, shredded
  • 1/4 cup onion, diced
  • 1 teaspoon sugar
  • 1/2 teaspoon salt (I used 1 teaspoon-it was too much)
  • hot water-almost boiling (approximately 1/2 cup)
  • Cooking oil

Mix dry ingredients together.  Add hot water until mixture is sticky on the spoon.  Toss in the jalapeno, onion and cheese.  Form into ping pong sized balls and drop into hot oil.  Wait until set and press down to flatten.  Cook until brown on both sides.
