Smoked Jalapeno Sausage & Vegetables

It was a busy week.  Thanks goodness the weekend is finally here.  I had planned on taking my computer in for repair but being it’s a Memorial Day weekend we decided it best to wait until next week.  I had a small altercation with an annoying fly, swatted him with my baseball cap and cracked my computer screen. (smacking head)

Last nights dinner was simple and even though hot soup isn’t exactly a summertime meal I added fresh sliced avocado and sour cream.  Fritos or tortilla chips would have been a great addition as well but I am trying to quit them. 😦

  • 1 package (14 oz.) Smoked Jalapeno Sausage fully cooked), sliced
  • 1 can (14 oz.) Garlic Fire Roasted Tomatoes
  • 2 cups low sodium chicken broth
  • 1 yellow Yukon gold potato, diced
  • 1/2 white onion, diced
  • 1/2 cup baby carrots
  • 1 jalapeno, diced
  • 1/2 cup frozen corn
  • 1/2 cup frozen edamame
  • 1 teaspoon salt
  • 1 teaspoon white pepper
  • 1 teaspoon thyme

Mix vegetables, broth and spices and cook until vegetables are tender.  Add sausage and cook on low for 20 minutes.
