Well….my garden made it through another night with no thievery. When I peeked around the corner this morning I saw two suspicious furry creatures with big ears running across the road away from my garden. I am certain they were up to no good. Today I am going to get to work on that bunny-proof barrier system. I didn’t think that rabbits ate tomatoes but apparently they do because a couple were missing yesterday morning. I am a very light sleeper if I hear the slightest noise from outside I am up at the bedroom window like a freak looking at the garden area….ridiculous. I would greatly appreciate any advice on this problem.
We ate dinner a little later than usual and so it was a simple one – ground beef quesadillas with a few veggies and an ancho chile aioli. The quesadillas themselves were pretty basic but I loved, loved, loved the sauce.
For The Sauce:
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 teaspoon lime juice
- 1 teaspoon garlic powder
- 1/2 teaspoon cilantro
- 1/2 teaspoon cumin
- 1 teaspoon ancho chili powder
- 1/4 teaspoon black pepper1 teaspoon chives
Mix all the ingredients together and refrigerate for at least 30 minutes. 🙂
For the quesadillas: (Makes two whole quesadillas – 8 pieces)
- 1 cup ground beef, browned, drained and patted dry
- 1 cup pepper jack cheese, shredded
- 1/4 cup salsa
- 1/2 cup purple cabbage, chopped
- 8 cherry tomatoes, quartered
- 1 jalapeno, diced
On a tortilla put a layer of cheese, a layer of ground beef, the veggies and lastly another layer of cheese. Spray skillet with cooking spray and brown on both sides.
