‘Rise and attack the day with enthusiasm’
I had a hankering for some sort of Asian food. All we have here in our town is a Chinese buffet-style restaurant. I have to admit, the place does stay busy but then again there are not many choices here, besides I had everything here to prepare a fabulous dinner for us. Last time I went food shopping I picked up some lomein noodles. I have eaten them at restaurants but have never cooked them personally. Love them!!!! I cooked them in broth. I am addicted to these noodles, seriously. I decided to steam the vegetables instead of stir frying them because they retain their color so much better.
For The Veggies:
- 1/2 cup baby carrots
- 1 cup zucchini, cut into sticks
- 1/2 cup purple cabbage, chopped
- 1 red bell pepper, sliced
- 1 small can baby sweet corn
- 4 dried red chile peppers, rehydrated
- 1/2 cup sweet and sour duck sauce
- 1 teaspoon chile paste
- 1/2 teaspoon minced garlic (in oil)
Steam veggies until tender. Remove from heat. Mix sweet and sour duck sauce, chile paste and garlic in small bowl and pour over veggies.
For the Cod:
- 4 cod filets
- panko bread crumbs (I used garlic seasoned)
- 1 egg
- 1 Tablespoon milk
- garlic pepper (One of my absolute favorite spices)
- 3 Tablespoons ‘olive oil
With a paper towel, pat the cod filets so they are dry, In a small bowl beat the egg with the milk. Place the panko crumbs on a separate plate. Dip the filets into the egg mixture and then into the panko crumbs. Place in skillet on Med-Hi heat and fry until golden. Remove and drain on paper towel.
We really enjoyed this meal and now we are going to sit on the porch with the dogs and enjoy the sunset over the lake.
