Sour Cream Pancake With Peaches and Blueberry Syrup

I am totally enjoying this hot summery flip-flop weather.  All the wildflowers, birds hatching and baby rabbits (no shortage of those).  My sis sent me a video of some baby mockingbirds-ADORABLE.  20160524_135918000_iOSShe is sure taking her chances with that mama bird though.  All the critters around here are on the move this time of year.  We saw a huge snake yesterday-don’t think it was poisonous.  20160523_215824518_iOSWe may try to fish a bit this evening since that seems to be the best time.  Catch and release. 🙂  I am headed outside to check my little garden and maybe if I am lucky I have a few yellow squash that are ready.  20160523_211743594_iOSThe onion scrap that I planted is growing four onions.  Pretty awesome.


Woke up craving a sugary breakfast.  That’s not normal for me and I know what happens when I have sugar early in the day. Makes me hyper.  Settled on pancakes-winged it with no recipe.  Result was more of a crepe but nevertheless delicious.  Topped them with some defrosted frozen peaches and blueberry syrup.  🙂

  • 1/2 cup all-purpose flour
  • 1 Tablespoon sugar
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 egg
  • 1/4 teaspoon cinnamon

Mix all the ingredients together.  Heat butter in large skillet over med-hi heat and cook until browned.
