Chow Chow Marinated Salad

‘Create your own sunshine’


I made this simple salad to go with my accidental experimental quinoa tuna casserole that came out of my kitchen earlier today. I felt it needed something to take the focus off of it. The idea came after I had treated my hair with red wine vinegar this afternoon and the aroma was kinda following me around. I’m going to see how long it takes my husband to realize that its me that smells like a salad.

This was a simple little salad.  The flavors of the vinegary chow chow (marinated cabbage and red bell peppers) and the honey really did create a unique flavor. 🙂


  • 20160512_204256004_iOS1 medium tomato, diced
  • 1 cucumber, diced
  • 1/2 Southern Chow Chow marinated cabbage
  • 1 teaspoon garlic, minced
  • 1 teaspoon red wine vinegar
  • 1 teaspoon honey
  • 1 teaspoon oil (I used walnut oil)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • juice from 1 slice of a lemon
  • marinated mozzerella balls


Combine the vegetables and spices together in a bowl.  Add the vinegar, honey and oil and toss gently.  Refrigerate.  Serve with fresh marinated mozzerella balls.
