Parmesan Omelet With Olives

 This one’s definitely a keeper.  Try it and let me know what you think.  Sometimes it’s best to just start taking risks without really thinking too hard about it.  Today it worked.  The combination of the parmesan and red peppers was wonderful and the olives were surprisingly the highlight of this omelet.  I forgot that I had onion ciabatta rolls, that would have made it even better.

Next thing on my list, get outside and start trimming some of my herbs to freeze. Have a great day 🙂

How to Do It:

  • 1 egg
  • 2 Tablespoons parmesan cheese
  • 2 Tablespoons cottage cheese
  • 1 teaspoon green onion
  • 1 teaspoon roasted red pepper
  • 1 teaspoon olives, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder

Mix the egg, cottage cheese, onion, olive and red pepper.  Spray small skillet with cooking spray and pour in egg mixture. ‘Knowledge Flip once, remove and top with grated parmesan cheese.
