‘When it rains look for rainbows, when its dark look for stars’


It’s always exciting when Spring arrives.  The produce department bins are heaped full of colorful fruits and vegetables and the smell of freshness is in the air.  That smell reminds me of when we were kids, both our Great Aunts had gardens and in the Summer we got to pick veggies and occasionally shell peas.  I remember shelling purple hull peas with my sister and cousin until our fingers hurt and were stained purple.  We were soooo excited when a pea shelling machine showed up.  Everything was prepared fresh and the rest stored in large mason jars, milk came from the cow out back, butter was made at home and dinner was eaten together at the table.  People worked hard and rarely complained.  It was rewarding work to see the fruits of a hard days work. Things were appreciated.  I sure do miss those days.

  • I cucumber, diced and seeded
  • 1 medium tomato, diced and seeded
  • 1/4 cup purple onion, diced
  • 1 Tablespoon fresh spicy basil
  • 1 Tablespoon chopped green olives
  • mozzarella pearls
  • 1/2 teaspoon lime juice
  • Salt and Pepper
