Peach-Blueberry Mini Cheesecakes For Two

Another recipe detour.  Originally I had planned to use bananas instead of peaches because my Mama used to make a blueberry, banana cheesecake with a graham cracker crust that was out of this world.  All I had were frozen bananas and that was not going to work so I used some freeze-dried peaches instead. 20160505_005515836_iOS The blueberry-peach combination worked really well.  I made my blueberry syrup from frozen blueberries since I am STILL trying to clean out my freezer.  Finally that project is about to be crossed off my to-do list.

Preparing these little desserts was easy and the recipe could be modified for whatever you have on hand.  The great thing about making individual desserts is that when it’s gone it’s gone (I ate mine in less than a minute) so no going back for seconds and feeling miserable. 🙂



The stuff you need:

  • 4 ladyfingers
  • 1 teaspoon butter, melted
  • 4 oz. cream cheese, softened
  • 1/4 cup sugar
  • 1/4 teaspoon vanilla
  • 1 small can sliced peaches, drained and patted dry
  • Blueberry syrup
  • Whipped cream

What to do:

  • Crush ladyfingers, add melted butter, mix and press into 1 cup ramekin
  • Mix cream cheese, sugar and vanilla and microwave 30 seconds
  • Stir until creamy and spoon onto top of ladyfingers
  • Cover and refrigerate
  • Top with peaches, syrup and whipped cream when ready to serve
