Sweet Deviled Eggs

These are so cheerful and would have been perfect for our Easter dinner.  I saw this idea somewhere online a while back so the other day after I made beet salad I reserved the juice to color my eggs.  Normally I use kosher dill pickles but since beet juice is sweet I thought a sweet spicy pickle may be a better compliment.  There was no taste beet flavor at all, just a faint sweetness from the juice.  I was worried when I peeled back the foil to reveal my creation to my husband because he is not a fan of the beet AT ALL.  He stared at them for a minute and bit the bullet, ate one and apparently approved because he ate two more.  🙂

Here’s How

  • 3 eggs
  • 2 sweet spicy pickle slices, diced small
  • 1 Tablespoon mayonnaise
  • 1 Tablespoon horseradish mustard
  • Salt and Pepper
  • Beet Juice
  • Boil and peel eggs
  • Soak in beet juice for about 15 minutes
  • Cut eggs in half and remove yolk
  • Dice pickles small and pat dry
  • In separate bowl blend yolks and all other ingredients
  • Stuff the eggs
