Mexican Pork Taco Salad

It was another pretty day.  I enjoyed it by mowing the yard and tending my little garden.  After the rain everything is flourishing and I noticed yesterday that there are two tiny yellow squash and a bell pepper about the size of a marble.  How exciting.  🙂

We made taco salads for dinner this evening.  I cannot for the life of me make a normal sized salad.  Mine always ends up being enormous.  As you can see from the photo it is in a Corningware baking dish for goodness sake. (Sigh)

  • 1 pound pork chops, cubed
  • 1/2 onion, diced
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cayenne
  • Salt and Pepper
  • 1 teaspoon mined garlic or garlic powder
  • Leaf lettuce, chopped
  • 2 medium tomatoes, diced
  • 1 jalapeno, diced
  • 2 avocados, mashed
  • 1/2 cup salsa (I used HOT)
  • shredded pepper jack cheese
  • sour cream

Preaheat oven to 325 degrees F.  Prepare by dicing the onion, cutting the pork into bite sized pieces and placing in a small roasting pan.  Season with the cumin, oregano, cayenne, garlic and salt and pepper.  Add enough water to almost cover the pork.  Place the lid or foil over the pan and cook for 1 hour.  Since it is in small pieces it will be very tender which is not always the case when cooking whole pork chops.

Maggie Mae was stalking me during this step.  Hmmmm….either that or rehearsing for a humane society commercial.  She got a doggy cookie.

After the pork is in the oven you can start dicing the lettuce, tomatoes and jalapeno  Place in separate dishes, cover and put in the frig.  Now for my favorite part, the avocados.  Cut them in half, remove the seed, scoop out the yummy goodness and mash them.  Add whatever spices you like to make a guacamole.  I like them plain so I did not add anything.  (I also kept the seed to plant later because I like to watch them grow).  Cover and put in the frig also.

Remove the pork from the oven and drain.  Add the salsa, toss it a bit and put it in a pretty serving bowl.  I enjoyed mine with pepper jack cheese and sour cream.  I have no idea what my husband put on his but I’m sure it was hot sauce.  Enjoy and have a Blessed day.
