A Simple Meatloaf

My husband is going to be HAPPY.  Meatloaf is his favorite and his Mom makes the best.  My Mama taught me how when I was about 13 and I have made my fair share of them.  For years I was cooking for my Daddy and every time I made one he would say it was the best one I’d ever made.  I think he could live on just meatloaf.  Being that I live 5 hours away now, my sister is making “the best meatloaf ever” for him.  🙂

For my meatloaf today I added jalapeno and Cajun seasoning to change things up a bit.  20160429_172159033_iOSI reserved a little bit of the meat and made two meatloaf muffins with mashed potato icing.  Ate one for lunch.  YUM.


  • 1 pound ground beef
  • 1/2 medium onion, diced
  • 1/2 jalapeno, diced small
  • 1 – 14 oz. can diced fire roasted tomatoes
  • 2 slices whole wheat bread, torn into small pieces
  • 1 egg
  • 1/2 tsp Cajun seasoning
  • Salt and Pepper


  • Preheat oven to 350 degrees F
  • Dice onion, jalapeno and garlic and add to meat in large mixing bowl
  • Add 1/2 can of fire roasted tomatoes, bread, egg, salt, pepper and Cajun seasoning
  • Mix well
  • Place in baking dish and shape into a loaf (I prefer flat and round – I think it cooks better)
  • Cover and bake approximately 1 hour
  • Pour sauce over meatloaf and bake uncovered an additional 15 minutes

For The Sauce

  • 1/2 can of diced fire roasted tomatoes
  • 1 – 8 oz. can tomato sauce
  • 1/2 teaspoon Cajun seasoning
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon prepared mustard (powder)
  • salt and pepper
  • Blend together in food processor ( I used my smoothie maker)
