Brussels Sprouts Pizza on Naan Bread

I have become such a huge fan of Naan bread (khamiri) which is a type of Indian flatbread.  I first discovered it at a farmers market.  I bought some that was freshly baked along with some eggplant humus.  Needless to say….ate it ALL that night.

Today my husband and I decided to make pizza.  I will tell you how I made mine.  He took a  slightly different route and slathered his in YUMYUM steak sauce so that recipe need not apply.  The ingredients below are for two pizzas though.

  • 2  Pieces Naan Bread (I used the garlic flavored)
  • 1/2 c. steamed brussels sprouts
  • 1/2 c. diced red bell pepper
  • 1/4 c. black beans (I used some I had frozen previously)
  • 1 Small Tomato (thinly sliced)
  • Shredded Mozzarella Cheese

Steam the brussels sprouts until tender.  I use a metal strainer and steam over about an inch of hot water.  I then quarter them and set them aside.

Slice the tomatoes and dice the red bell peppers. I had the black beans already so I decided to use them.  I like to separate ingredients into individual bowls just because I think it looks prettier.

I chose not to use sauce or spice because I like a more natural tasting pizza, however add them if you like.  I started with a light layer of mozzarella cheese, added the other ingredients and another layer of cheese.  I baked it at 425 degrees directly on the oven rack for approximatly 10 minutes.  The edges should be crispy but the middle will stay on the softer side since after all it is bread.  Happy eating!
