“Happiness is knowing there is a cake in the oven”
Pound cake is one of my favorite desserts and was one of the first cakes I ever made entirely on my own. Visiting at my grandmother’s house there was always some sort of cake peaking from under the glass dome of the pedestal cake stand. I love these cakes because they are so easy to make and are complimented with almost any topping. The recipe that I have makes a rather large cake so I cut in half and tweaked it a little for this cake. The original recipe called for sour cream but I chose to add key lime yogurt instead and then added the coconut and a little bit of cream cheese frosting just because.
- 1 stick butter
- 1 1/2 cups sugar
- 1/2 cup key lime yogurt
- 1/2 teaspoon baking soda
- 1 1/2 cups all purpose flour
- 3 eggs
- 1/3 cups sweetened coconut
- cooking spray
Preheat oven to 325 degrees F.
In a large mixing bowl, cream the butter and sugar with a hand mixer. Add the key lime yogurt and blend well. Sift the flour and baking soda together and add to the creamy mixture alternately with eggs, beating well after each egg.
Grease and flour small bundt pan. The baking spray that has flour in it will work as well. I normal use a bundt pan but decided to use a decorative pan this time.
Bake for 1 hour or until toothpick comes out clean.
