Confetti Egg

‘Sometimes you will never know the value of a moment until it becomes a memory’


I thought since this was my first post it would be fitting to start with the most important meal of the day….breakfast.  Today I decided to make a ‘confetti egg for one’.  My husband is not a big breakfast person so today it’s just me.  It is very simple.  I am going to do it while I enjoy a cup of coffee in my favorite cup.


You Will Need:

  • Cooking Spray
  • 1 Egg
  • 1 Tablespoon Milk
  • 1 Tablespoon Diced Red Bell Pepper
  • Salt and Pepper
  • Shredded Cheese

To make this egg I am using a 1 cup ramekin which I lightly spray with olive oil cooking spray.  I then break one egg into the ramekin and remove ‘the string’, at least that’s what my Mama always called it. It is just a habit I guess.  I then add 1 Tablespoon of milk. (I use half and half because I am totally addicted to it).

I then added 1 Tablespoon of diced red bell pepper and little salt and pepper.  Sometimes I will add fresh chopped jalapeno or onions.  It’s always fun to play with different ingredients.  Dill is very good with eggs, just sayin’.  This morning I just happened to have an attractive red pepper staring at me when I opened the frig so that is what I’m using.

I use a fork and stir it well.  Then I cover it with a paper towel and put it in the microwave for 35 seconds.  It will start to puff up around the edges.  I then take it out, stir it a bit and put it back in for another 35 seconds.  All microwaves are different so just experiment with it.  I have a cheapo model but I do believe they work the best.

Ding….Its done.

I take the fork and slide it out face up on my plate.  Beautiful.  I added some shredded pepper jack cheese on top and toasted half of an onion ciabatta roll to go with mine.  Enjoy and have a fabulous day.
